Ingredients
Pancakes:
  • 1½ cups brown rice flour
  • ½ cup cornmeal
  • 1½ cups non-dairy milk
  • 2 Tbsp. chia seeds
  • 1 Tbsp. flax meal
  • 1½ cups fresh figs
  • 1 Tbsp. coconut oil
  • 1 Tbsp. coconut sugar
  • 1 Tbsp. vanilla extract
  • 1 Tsp. cinnamon
  • 1 Tbsp. apple cider vinegar
Toppings:
  • coconut butter (optional)
  • maple syrup (optional)
Instructions
  1. In a large bowl mix together the coconut milk, apple cider vinegar, chia seeds and flax meal. Give it a good stir and let it sit for 3 minutes.
  2. While allowing milk mixture to sit, chop figs into small cubes. Set aside.
  3. Next add flour, cornmeal, oil, sugar, vanilla and cinnamon. Mix well.
  4. Next fold in 1 cup of the figs, and stir.
  5. Heat frying pan to medium and lightly oil pan. Pour batter and cook pancakes until bubbles start to form and edges become solid. Flip and cook on the other side.
  6. Should make 6-8 pancakes.
  7. Top pancakes with coconut butter and maple syrup (if using) and remaining figs.
