Ingredients
Pancakes:
- 1½ cups brown rice flour
- ½ cup cornmeal
- 1½ cups non-dairy milk
- 2 Tbsp. chia seeds
- 1 Tbsp. flax meal
- 1½ cups fresh figs
- 1 Tbsp. coconut oil
- 1 Tbsp. coconut sugar
- 1 Tbsp. vanilla extract
- 1 Tsp. cinnamon
- 1 Tbsp. apple cider vinegar
Toppings:
- coconut butter (optional)
- maple syrup (optional)
Instructions
- In a large bowl mix together the coconut milk, apple cider vinegar, chia seeds and flax meal. Give it a good stir and let it sit for 3 minutes.
- While allowing milk mixture to sit, chop figs into small cubes. Set aside.
- Next add flour, cornmeal, oil, sugar, vanilla and cinnamon. Mix well.
- Next fold in 1 cup of the figs, and stir.
- Heat frying pan to medium and lightly oil pan. Pour batter and cook pancakes until bubbles start to form and edges become solid. Flip and cook on the other side.
- Should make 6-8 pancakes.
- Top pancakes with coconut butter and maple syrup (if using) and remaining figs.
