Ingredients
Salad:
  • 1 head of lettuce
  • 1 avocado
  • 1 tomato
  • ¼ of a red onion
  • 1 can white beans (rinsed)
  • 1 bell pepper
Dressing:
  • 2 Tbsp. tamari (reduced sodium)
  • 2 Tbsp. olive oil
  • ¼ cup apple cider vinegar
  • 1 Tbsp. dried basil
  • 1 Tbsp. dried oregano
  • 2 cloves of garlic
  • 1 bell pepper
  • 1 Tbsp. nutritional yeast
  • ½ cup sunflower seeds
  • ¾ cup of water
Instructions
  1. Wash and chop all salad ingredients. Add them to a large bowl along with the white beans. Set aside.
  2. Next, in a blender, blend all dressing ingredients. Mix salad and serve.
  3. Add dressing as needed, you may have some left over dressing.
Notes
Extra dressing can be stored in refrigerator for up to 3 days
