Cinnamon Curry Fries

Cinnamon Curry Fries
  • 2 sweet potatoes
  • 2 tsp. curry powder
  • 1 Tbsp. cinnamon
  • 1 tsp. coconut sugar
  • ½ tsp. sea salt
  • 2 Tbsp. non-dairy milk
  • 1 tsp. apple cider vinegar
  1. Pre-heat oven to 450°F.
  2. Wash each sweet potato and remove ends. Cut length wise into slabs about 'pinky finger width'. From there, cut out ¼ inch, fry-shaped pieces.
  3. In a large bowl combine all ingredients leaving out the sweet potatoes. Mix well.
  4. Next add sweet potatoes to large bowl and toss to coat.
  5. Place sweet potatoes on baking sheet covered with parchment paper. Make sure fries have a little room on each side, might have to use 2 baking sheets.
  6. Bake for 25 minutes.
