Chocolate Protein Squares

Ingredients
Ingredients:
  • 7 dates, soft and pitted
  • ¼ cup brown rice protein powder (any kind/flavor will work)
  • ¼ cup hemp seeds (raw)
  • 1 Tbsp. coconut oil
  • ½ cup dried coconut flakes
  • ¼ cup cacao powder
  • 1 cup rolled oats
  • 1 dash sea salt
Chocolate Coating:
  • 2 Tbsp. maple syrup
  • 1.5 Tbsp. coconut oil, melted
  • 4 Tbsp. cacao powder
Instructions
  1. Line an 8x8 Pyrex baking dish with parchment paper or wax paper and set aside.
  2. Place oats in food processor and process until you have oat flour. Pour flour into a medium bowl and set aside.
  3. Next, place dates in food processor and give them a quick pulse or two to break them up a little. Then add protein, hemp seeds, coconut oil, coconut flakes, cacao powder and sea salt to the food processor. Process until well combined.
  4. Scrape the mixture out of the food processor and roll around in oat flour. Then put the mixture back into the food processor and process until uniform in color.
  5. Pour Mixture into prepared pan and place in the freezer for 10 minutes.
  6. Make chocolate coating by mixing all 'Chocolate Coating' ingredients together in a medium bowl.
  7. Cut bars into squares and roll around in chocolate until coated (this gets a little messy!)
  8. Once all the bars are coated, place back in freezer for at least 20 minutes to harden up. Keep bars in freezer until ready to eat.
