Chocolate Chunk Cherry Blondies

Ingredients
  • ½ cup garbanzo bean flour
  • ¾ cup brown rice flour
  • ¼ cup tapioca starch
  • ¾ cup coconut sugar
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. arrowroot
  • ⅓ cup coconut oil (melted)
  • ½ cup hot water
  • ¼ cup apple sauce
  • 1 Tbsp. vanilla extract
  • 1 cup chocolate chips
  • ¼ cup dried cherries
Instructions
  1. Preheat oven to 350 degrees F.
  2. Line an 8x8 square Pyrex with parchment paper and set aside.
  3. Next mix together the garbanzo bean flour, brown rice flour, tapioca starch, sugar, baking powder, soda and arrowroot. Stir well.
  4. Next in a small sauce pan, heat up the water so it’s hot, right before boiling, and add coconut oil and apple sauce. Once the three are melted, add those to the dry ingredients, along with vanilla, cherries and chocolate chips (reserve ¼ cup of chocolate chips for the top). Stir well. Chocolate chips should start to melt and turn the batter more of a light brown color.
  5. Pour Batter into prepared Pyrex and sprinkle the remaining chocolate chips on top.
  6. Bake for 28 minutes.
  7. Remove from oven and allow to cool completely before cutting…about 30 minutes…or eat warm and gooey :)
