Chickpea Curry Noodles

Serves: 4-6
  • 1 can coconut milk
  • 1 can chickpeas
  • 1 box thai brown rice noodles
  • 1 small bunch of broccoli
  • ½ red onion
  • 3 cups vegetable broth
  • 2 Tbsp. curry powder
  • 1 Tbsp. cumin
  • 1 Tbsp. garlic powder
  • sunflower seeds
  • bean sprouts
  • sliced avocado
  1. In a large pot bring coconut milk, vegetable broth, chopped onion, curry powder, cumin and garlic powder to a boil.
  2. Once broth is boiling turn down to low and add chopped broccoli, chickpeas and noodles to the pot and stir well. Cook until noodles are soft. Dish out noodles into 4-6 bowls.
  3. Top bowls with sliced avocados, sunflower sprouts and sunflower seeds if desired.
