Chickpea Curry Noodles

Ingredients
Noodles:
- 1 can coconut milk
- 1 can chickpeas
- 1 box thai brown rice noodles
- 1 small bunch of broccoli
- ½ red onion
- 3 cups vegetable broth
- 2 Tbsp. curry powder
- 1 Tbsp. cumin
- 1 Tbsp. garlic powder
Topping:
- sunflower seeds
- bean sprouts
- sliced avocado
Instructions
- In a large pot bring coconut milk, vegetable broth, chopped onion, curry powder, cumin and garlic powder to a boil.
- Once broth is boiling turn down to low and add chopped broccoli, chickpeas and noodles to the pot and stir well. Cook until noodles are soft. Dish out noodles into 4-6 bowls.
- Top bowls with sliced avocados, sunflower sprouts and sunflower seeds if desired.
