Chickpea Burgers with Apricot BBQ Sauce

Ingredients
Burgers:
  • 1 Tbsp. flax meal
  • 1¼ + 3 Tbsp. water
  • ½ cup quinoa flakes
  • 1½ cup millet
  • 1 can chickpeas
  • ½ an onion
  • 1 carrot
  • 2 cloves of garlic
  • ¼ cup cilantro
  • 1 tsp. cinnamon
  • 1 tsp. paprika
  • 1 tsp. chili powder
  • 2 tsp. cumin
  • 1 Tbsp. tamari
  • 1 Tbsp. olive oil
  • dijon mustard*
  • sweet relish*
Apricot BBQ Sauce:
  • 1 Tbsp. coconut oil
  • ½ an onion, diced
  • 2 inches fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, minced
  • 2 cups apricots, chopped
  • ½ tsp. cayenne pepper
  • ¼ cup coconut sugar
  • ½ cup tomato paste
  • 1 Tbsp. apple cider vinegar
Instructions
Burgers:
  1. Preheat oven to 350°F.
  2. Make a flax egg by combining 3 Tbsp. water with 1 Tbsp. ground flax seeds in a small bowl. Mix well and set aside. Place 1 cup of millet into a high speed blender and blend until "millet flour" is made.
  3. On stove top boil 1 & ¼ cup of water in a medium sauce pan. Add remaining ½ cup of millet and cook covered for 15- 20 minutes. In a large skillet, cook on medium heat carrots, onion and garlic. Cook until carrots are soft. Stir frequently.
  4. Add this mixture along with rinsed chickpeas to the food processor and pulse 3-4 times; lightly mixed but still chunky.
  5. Next combine flaxmeal mixture, carrot mixture, cooked millet, millet flour, quinoa flakes, spices, tamari, olive oil and chopped cilantro. Mix well.
  6. Form into patties. Should make 6 medium/large patties. Place on baking sheet and bake for 25 minutes. Then turn to broil for 2 minutes.
  7. Place a scoop of the apricot BBQ sauce on top of burgers, then on top of that dijon mustard and finish with sweet relish.
Apricot BBQ Sauce:
  1. In a large pot, over medium heat, add oil and sauté onions, garlic and ginger until onions are translucent. About 4-5 minutes. Add apricots and cayenne and sauté for 3-4 minutes. Add sugar, tomato paste, vinegar and jalapeno to pot and bring to a simmer. Cook for 10-15 minutes.
  2. Remove from heat and let cool.
  3. Place contents into blender and blend until smooth. Set aside until ready to serve.
