Carrot Ginger Salad Dressing

Ingredients
- 1½ cups carrots
- 2 Tbsp. fresh ginger
- 3 Tbsp. rice vinegar
- 3 Tbsp. orange juice
- 2 Tbsp. tamari
- 3 Tbsp. flax or olive oil
- 1-2 Tbsp. water, as needed
Instructions
- Shred carrots with a cheese grater and peel/chop ginger and place in food processor along with all other ingredients.
- Process until smooth. Dressing will be a little chunky, but tastes great.
- Serve over your favorite green salad.
