  • 1½ cups carrots
  • 2 Tbsp. fresh ginger
  • 3 Tbsp. rice vinegar
  • 3 Tbsp. orange juice
  • 2 Tbsp. tamari
  • 3 Tbsp. flax or olive oil
  • 1-2 Tbsp. water, as needed
  1. Shred carrots with a cheese grater and peel/chop ginger and place in food processor along with all other ingredients.
  2. Process until smooth. Dressing will be a little chunky, but tastes great.
  3. Serve over your favorite green salad.
