Cardamom Banana Pancakes

Serves: 2-4
Ingredients
- 1½ cups brown rice flour
- 1 Tbsp. baking powder
- ⅛ tsp. ground cardamom
- 1 large banana
- ¼ tsp. nutmeg
- 1 tsp. vanilla extract
- coconut oil
- pure maple syrup
- 1½ cups + 1 Tbsp. coconut milk (from can is best)
Instructions
- In a large bowl add flour, baking powder, cardamom and nutmeg.
- Mash banana with fork and add to a small bowl with coconut milk and vanilla.
- Add small bowl ingredients to large and stir well.
- Next, heat frying pan to medium, oil pan with coconut oil. Ladle batter into pan and cook for 1-3 minutes on each side.
- Continue until all batter is used up, you may have to add a little more oil to the pan.
- Serve with maple syrup.

*Pancakes also great w/ Strawberry Chia Jam or Peanut butter.
