Serves: 2-4
  • 1½ cups brown rice flour
  • 1 Tbsp. baking powder
  • ⅛ tsp. ground cardamom
  • 1 large banana
  • ¼ tsp. nutmeg
  • 1 tsp. vanilla extract
  • coconut oil
  • pure maple syrup
  • 1½ cups + 1 Tbsp. coconut milk (from can is best)
  1. In a large bowl add flour, baking powder, cardamom and nutmeg.
  2. Mash banana with fork and add to a small bowl with coconut milk and vanilla.
  3. Add small bowl ingredients to large and stir well.
  4. Next, heat frying pan to medium, oil pan with coconut oil. Ladle batter into pan and cook for 1-3 minutes on each side.
  5. Continue until all batter is used up, you may have to add a little more oil to the pan.
  6. Serve with maple syrup.
*Pancakes also great w/ Strawberry Chia Jam or Peanut butter.
