Cantaloupe Peach Salad

Ingredients
Salad:
- 1 head of lettuce
- 1 tomato
- 1 small cantaloupe
- 1 cucumber
- ¼ cup fresh mint
- ¼ cup sunflower seeds
Dressing:
- ¼ cup dijon mustard
- 1 tsp. raw honey*
- 1 large or 2 small peaches, pitted
Instructions
- Chop lettuce tomato, cantaloupe, cucumber and fresh mint and add those to a large bowl along with sunflower seeds.
- In a food processor add dressing ingredients and blend until smooth.
- Pour dressing over salad, toss well. Serve immediately.
