California Collard Wraps

Ingredients
Carrot Spread:
- 2 cups chopped carrots
- 1 Tbsp. miso
- 1 tsp. sesame oil
- ½ Tbsp. maple syrup
- 1 clove garlic
Wraps:
- 2 large collard leafs
- 1 cup cooked quinoa
- 1 avocado sliced
- 1 tomato sliced
- ¼ red onion sliced
- 1 apple thinly sliced
- dijon mustard
Instructions
- Place apple in food processor with slicer attachment and thinly slice apples. Set aside. (Or use orange slices)
- Place all ingredients for carrot spread into rinsed food processor fitted with S-blade. Process until well combined.
- Remove stems of collard wraps. Taking 1 de-stemmed collard, lay it flat and spread a thin layer of mustard like you would for a sandwich.
- Layer ingredients onto collard leafs like you would layer sushi filling (create rows running length-wise) Quinoa, apples or orange, carrot spread, avocado, tomatoes then onion.
- Roll them up lengthwise and fold-in the ends. Cut down the middle.
- Repeat with the next collard wrap.
