Blueberry Cornmeal Pancakes

  • 1 Tbsp. flax meal
  • ¾ cup non-dairy milk
  • ¾ cup brown rice flour
  • ½ cup corn meal
  • 1 Tbsp. baking powder
  • ¼ tsp. almond extract
  • 1 Tbsp. coconut oil
  • sea salt, to taste
  • 1 cup fresh or frozen blueberries
  1. In small bowl combine flax and non-dairy milk, set aside. In large bowl combine flour, cornmeal, baking powder and salt. Add almond extract and oil to flax mixture, stir well. Add wet mixture to dry and stir to combine. Add berries right before you’re ready to cook. Lightly oil the pan and heat to medium.
  2. Cook pancakes for 3-5 minutes flipping half-way, or until golden brown.
  3. Top with desired topping.
