Blender Pancakes

Ingredients
Pancakes:
  • 1 cup rolled oats
  • 1 cup brown rice
  • 1 large apple (sweet variety)
  • 2 cups almond milk
  • ½ tsp. sea salt
  • 2 Tbsp. coconut oil
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
Optional Toppings:
  • fresh or frozen berries (defrosted)
  • non-dairy whip cream
  • maple syrup
  • nut butters
Instructions
  1. Place brown rice and oats in a high speed blender and blend until you have a flour.
  2. Then add apple (cut in slices, core removed), milk, oil and spices. Blend until smooth.
  3. Lightly oil frying pan and cook pancakes at medium heat on one side until they start to bubble. Flip and cook on the other side for 1-2 minutes.
  4. Store cooked pancakes in warm oven while you finish cooking the rest of the batter.
  5. Top finished pancakes with desired toppings.
Notes
Pancakes freeze well.
