Blender Pancakes

Ingredients
Pancakes:
- 1 cup rolled oats
- 1 cup brown rice
- 1 large apple (sweet variety)
- 2 cups almond milk
- ½ tsp. sea salt
- 2 Tbsp. coconut oil
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
Optional Toppings:
- fresh or frozen berries (defrosted)
- non-dairy whip cream
- maple syrup
- nut butters
Instructions
- Place brown rice and oats in a high speed blender and blend until you have a flour.
- Then add apple (cut in slices, core removed), milk, oil and spices. Blend until smooth.
- Lightly oil frying pan and cook pancakes at medium heat on one side until they start to bubble. Flip and cook on the other side for 1-2 minutes.
- Store cooked pancakes in warm oven while you finish cooking the rest of the batter.
- Top finished pancakes with desired toppings.
Notes
Pancakes freeze well.
