Black Bean Burgers

Ingredients
Burgers:
- 1 can black beans (rinsed)
- 1 garlic clove, minced
- 2 scallions, chopped
- 1 cup chopped carrots
- 1 cup parsley, chopped
- 2 cups thick-rolled oats
- 1 tsp onion powder
- 1 can tomatoes w/ green peppers (juice removed)
Toppings:
- 4 leaves of romaine lettuce
- 1 tomato, sliced
- ½ onion, sliced
- dijon mustard
- hamburger bun (optional)
Instructions
- Preheat oven to 450°F.
- Run your rolled oats through the food processor or blender until finely chopped and milled. Then pour into a large mixing bowl.
- Next, process all other ingredients in the food processor. Remove contents from and add to large bowl with oats. Mix well with hands until oats are fully combined.
- Form into 8 patties and place flatted out on an oiled baking sheet. Bake for eight minutes and then turn oven up to broil or two more minutes.
- Top with desired toppings.
Notes
-These burgers taste great alone or simply dipped in mustard
