Balsamic Tahini Salad

Serves: 2-4
Ingredients
Salad:
- 1 head of lettuce chopped
- 3 scallions chopped
- 3 carrots chopped
- 4 radishes chopped
- 1 cucumber chopped
- 2 tomatoes chopped
Dressing:
- ¼ cup tahini
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. water
- salt and pepper to taste
Instructions
- Chop lettuce, scallions, carrots, radishes, cucumber and tomatoes. Combine all salad ingredients into a large bowl.
- Combine all dressing ingredients into a small mixing bowl, stir well to combine.
- You may want to add more water to reach desired consistency. Add dressing to salad when ready to serve.
