Ingredients
  • 1¼ cup garbanzo bean flour
  • 1 Tbsp. coconut oil
  • ¾- 1 cup of water
  • ¼ cup pumpkin seeds
  • 1 avocado
  • 1 dash granulated garlic
  • 1 dash of salt
  • hot sauce*
  • sprouts, any variety*
Instructions
  1. In a high speed blender, mix flour, oil and water (start with less water and then add more). Batter should be consistency of thin pancake batter.
  2. Lightly oil frying pan, turn to medium heat.
  3. Once hot, add a ladle full of batter and tilt pan in a circle to form a large thin crepe in the pan. Allow to cook for 2-3 minutes on one side and then flip. Continue until all batter is used.
  4. Next in a bowl mash together avocados, garlic, and sea salt, set aside.
  5. Then turn oven to broil, cut edges off crepes so they form a square. Place on a baking sheet and broil for 2 minutes, watch carefully so they don't burn.
  6. Top with avocado mixture. And hot sauce and sprouts if using.
