Ingredients
- 1 bag of organic tortilla chips
- 1 can black beans
- 1 zucchini, shredded
- 1 tomato, chopped
- 2 green onions, chopped
- ¼ cup olives, chopped
- ¼ cup cilantro, chopped
- 1 avocado, cubed
- 1 container salsa
- Nutritional yeast, for topping
- Hot sauce, for topping
- Option: Sometimes we will bake sweet potatoes in cubes and put them on top.
Instructions
- Preheat oven to 350 Degrees F.
- Line chips on large baking sheet.
- Add 1//2 the container of salsa to the chips. Then the zucchini, black beans, onion and olives.
- Place chips in the oven for 10-15 minutes, just long enough to toast them.
- Remove and top with the remaining ingredients and dig in!

*Fee free to add more vegetables, we like to add cooked sweet potatoes & radishes if we have them!
