Serves: 2-3
  • 1 bag of organic tortilla chips
  • 1 can black beans
  • 1 zucchini, shredded
  • 1 tomato, chopped
  • 2 green onions, chopped
  • ¼ cup olives, chopped
  • ¼ cup cilantro, chopped
  • 1 avocado, cubed
  • 1 container salsa
  • Nutritional yeast, for topping
  • Hot sauce, for topping
  • Option: Sometimes we will bake sweet potatoes in cubes and put them on top.
  1. Preheat oven to 350 Degrees F.
  2. Line chips on large baking sheet.
  3. Add 1//2 the container of salsa to the chips. Then the zucchini, black beans, onion and olives.
  4. Place chips in the oven for 10-15 minutes, just long enough to toast them.
  5. Remove and top with the remaining ingredients and dig in!
*Fee free to add more vegetables, we like to add cooked sweet potatoes & radishes if we have them!
