Sweet Potato Spaghetti

  • 1 package quinoa spaghetti
  • 1 carrot
  • ½ a red onion
  • 1 large sweet potato
  • 1 (8oz) can of tomato paste
  • ¼ - ½ cup water
  • ¼ cup nutritional yeast
  • 1 tsp. garlic powder
  • 2 tsp. oregano
  • 2 Tbsp. olive oil
  • salt & pepper
  • red pepper flakes
  • nutritional yeast
  1. Preheat oven to 375°F.
  2. Wash and chop sweet potato into cubes. Place on a baking sheet lined with parchment paper or lightly oiled and bake for 30-35 minutes.
  3. While sweet potato bakes, cook noodles according to package directions.
  4. Next mix tomato paste, water, nutritional yeast, garlic, oregano and olive oil in a medium bowl. Sauce should be thick.
  5. Next chop onion and grate carrot, place in a large soup pot. Turn heat to medium and stir. Next add sauce mixture and cooked noodles. Stir well and turn to low. Add cooked sweet potatoes and stir again.
  6. Serve hot and top with salt, pepper, red pepper flakes and nutritional yeast.
