Ingredients
  • 4 cups dried beans (we used pinto, navy and black eyed peas)
  • 6 cups of water
  • ½ cup molasses
  • 1 cup tomato or bbq sauce
  • ⅓ cup coconut sugar
  • 1 tsp. liquid smoke
  • 1 Tbsp. smoked paprika
  • 1 Tbsp. granulated garlic
  • 1 onion
  • 1 Tbsp. dijon mustard
  • sea salt to taste
  • 2 Tbsp. vegan worcestershire sauce
Instructions
  1. Soak beans overnight (18-24 hrs in advance)
  2. Chop onion and set aside.
  3. In a large pot add beans and water; turn heat to medium and bring to a slow boil, once boiling place beans in crock pot with enough water to cover (about 3 inches). Add all remaining ingredients (including chopped onion) to crock pot or stove top pot and simmer for 6-7 hours.
  4. If cooking on stove you may need to add more water and stir on occasion.
  5. Adjust seasoning before serving and serve warm.
Notes
*Great with Simple Macaroni Salad recipe.
**These taste great the next day... Peter likes them so much he eats them cold!
