- 3 large parsnips
- 1 Tbsp. olive oil
- sea salt, to taste
- 3 Tbsp. nut butter (try peanut or almond)
- Preheat oven to 400°F.
- Line a baking sheet with parchment paper.
- Cut parsnips into fries. In a medium size bowl, mix together butter, olive oil and salt. Toss parsnips in bowl with your hands until fully coated.
- Place on baking sheet and cook for 25-30 minutes, or until crisp.
These may take more or less time depending on how hot your oven is
