Ingredients
Salad:
  • 1 head lettuce
  • 1 can garbanzo beans
  • ¼ cup almonds
  • 2 carrots
  • 1 mango
  • 1 pint blackberries
  • 1 tomato
Dressing:
  • 3 Tbsp. olive oil
  • 1 tsp. dijon mustard
  • 3 Tbsp. maple syrup
  • 2 Tbsp. water
  • 1 tsp. cinnamon
  • ½ tsp. ginger
  • 3 Tbsp. apple cider vinegar
Instructions
  1. Chop lettuce, mango and tomato and place in a large bowl. Shred carrots and add those to the bowl. Chop almonds and add to bowl along with blackberries. Drain & rinse garbanzo beans and in.
  2. Mix all dressing ingredients in a small bowl.
  3. When ready, pour dressing over salad, toss and serve.
