Ingredients
Pizza Pie Crust:
  • 1 cup dry polenta
  • 2 cups water
  • 1 Tbsp. garlic powder
  • ½ tsp. sea salt
Toppings:
  • 1 jar of pizza sauce
  • 1 can refried beans
  • 1 tomato
  • 2 green onions
  • 1 avocado, chopped small
  • ½ cup cilantro
Garnish:
  • hot sauce
  • nutritional yeast
Instructions
  1. In a medium saucepan bring water to a boil. Add polenta and stir continuously until a thick porridge consistency is achieved. Turn down to low and keep stirring for about 3-5 minutes. Remove from heat and allow to cool.
  2. Preheat oven to 425°F.
  3. Chop vegetables and prepare pizza sauce if making your own.
  4. Next lightly oil or line baking sheet with parchment paper.
  5. Using a ¼ or ⅓ measuring cup, scoop out polenta and place on sheet. Use back of cup or spoon to form into cakes. Make them as big or small as you want (we used ¼ and made 8 cakes).
  6. Place cakes in oven for 20 minutes. After 20 minutes remove cakes and top with pizza sauce and refried beans. Put back into the oven on broil for 3-5 minutes.
  7. Remove and top with desired toppings and garnishes.
