Ingredients
Wraps:
  • 1 bunch collard greens
  • 2 pears
  • 2 tomatoes
  • 1 carrot
  • ½ cup arugula*
Cranberry Sauce:
  • 1 pint fresh cranberries
  • 2 Tbsp. water
  • ½ cup coconut sugar
  • 1 tsp. cinnamon
Cinnamon Hummus:
  • 1 (14oz) can garbanzo beans
  • ½ lemon
  • 1 tsp. cinnamon
  • 2-4 Tbsp. water
  • ½ tsp. garlic granules
Instructions
  1. In a small sauce pan add rinsed cranberries and water. Bring to a boil. Using a large spoon, squish cranberries as they cook. Turn heat down to medium and add coconut sugar & cinnamon and continue to squash until sauce is created. Should take 5-10 minutes.
  2. Next make hummus by draining garbanzo beans and placing in a food processor. Juice lemon into the food processor. Add cinnamon, garlic and water. Blend until very smooth.
  3. Next wash collards and remove the ends. You can also shave the stems down on the back of the leafs. Set collards aside.
  4. Next cut carrots in thin strips, slice tomatoes and pears.
  5. To assemble, spread hummus on a collard leaf, then top with arugula, carrots, pear and tomatoes.
  6. Top with cranberry sauce and eat like a taco.
  7. Repeat until full:)
