Ingredients
  • 2 ripe plantains (soft w/spots)
  • 1 tsp. coconut oil
Instructions
  1. Set oven to broil.
  2. Peel the plantains just like a banana. Lay them flat and thinly slice them length-wise, so you have about 5-6 strips for each one.
  3. Use coconut oil to spread over a large baking sheet. Lay the plantains evenly spaced over sheet and broil for 3-4 minutes. Keep an eye on them because they burn easily. Once crispy on topside, remove and bake on the opposite side for another 3 minutes or so.
Notes
Baked Plantains are great in salad or simply dipped in guacamole or salsa
